Apple Gingered Salad

  • 3 medium apples, chopped
  • 8 oz. water chestnuts, drained and finely chopped
  • 2 celery ribs, finely chopped
  • 3 Tbsp. crystallized ginger, finely chopped
  • 1/2 cup vanilla yogurt
  • 1/4 cup mayo
  • 2 Tbsp. sugar
  • salt
  • 1/4 cup chopped pecans, toasted



Step 1

In a large bowl, combine the first 5 ingredients. Combine the yogurt, mayo, sugar, ginger and salt; pour over apple mixture and toss to coat. Chill.

Sprinkle with pecans just before serving.
