Chicken Fajitas Deliciosas

This is an exceptionally nice blending of flavors. If at all possible, use fresh limes, not bottled juice, it makes a very real difference.

Ingredients

  • MARINADE
  • 1/4 cup beer
  • 5-6 garlic cloves, minced
  • 1/3 cup fresh lime juice, about 4 limes
  • 1 Tblsp Worcestershire sauce
  • 1 Tblsp light brown sugar
  • 1/2 - 3/4 teaspoon cumin
  • 1/2 teaspoon kosher salt
  • FAJITA FILLING
  • 4 chicken thighs, about 1 lb., cut into strips
  • 2 Tablespoons peanut oil
  • 1/2 red pepper, cut into strips
  • 1/2 green pepper, cut into strips
  • 1/2 onion, sliced thin in half-rings

Preparation

Step 1

Mix all marinade ingredients together, then add the chicken, cover and refrigerate for 1-1/2 hours (perfect time).

Heat oil in large frying pan until it begins to shimmer. Remove chicken from marinade, and sauté for about 5 minutes. Add vegetables, and sauté for another 5 minutes.

Serve on warm, large tortillas, with Spanish rice, refried beans, grated cheddar, chopped tomatoes, and guacamole.
