Ingredients

  • 1 3/4 cup all-purpose flour
  • 1 tsp baking soda
  • 1/8 tsp salt
  • 1/4 cup vegetable shortening
  • 1/4 cup butter at room temperature
  • 1 cup granulated sugar
  • 1 tsp sugar
  • 2 lg eggs
  • 1/4 cup buttermilk
  • 2 medium size very ripe banana (about 3/4 cup)

Preparation

Step 1

Heat oven to 325.Grease 9x5x3 loaf pan
Mix flour, baking soda and salt
Beat shortening, butter, sugar and vanilla in a large bowl with electric mixer until pale and fluffy. Beat in eggs one at a time until well blended. Low speed add dry ingredients alternately with buttermilk then the mashed bananas. Bake 1 hr and 10 minutes or until toothpick comes out clean. Cool pan on rack 10 minutes. Remove from pan and cool. Wrap in foil and refrigerate.
