Penne with Balsamic Broiled Vegetables

  • 3 cups Penne Pasta, Cooked
  • 2 small zucchini
  • 1 medium red bell pepper
  • 1/2 cup Ken's Lite Balsamic Vinaigrette
  • 1/2 cup feta cheese, crumbled
  • 2 TBSP fresh mint, chopped



Step 1

Cut zucchini and red bell pepper in 2x1/2" strips. Toss to coat with 3 TBSP Ken's Balsamic Vinaigrette. Place vegetables on a pan and sprinkle with pepper. Broil for about 10 minutes, stirring occasionally, until vegetables are just tender. Mix vegetables with pasta, remaining vinaigrette, cheese and mint.
