Guilt- free meat loaf

Ingredients

  • 1 cup no-salt tomato sauce
  • 1 lb lean ground beef
  • 2 egg whites
  • 1 zucchini, grated
  • 1 rib celery, finely chopped
  • 1/2 small yellow onion, finely chopped
  • 1/2 cup quick-cooking oats
  • 1/4 cup toasted wheat germ
  • 2 tbsp sliced black olives
  • 1 tsp dried oregano
  • 1/4 tsp ground black pepper

Preparation

Step 1

1. Preheat the oven to 350°F. Coat a nonstick 9"x5" pan with cooking spray. In a large bowl, combine 1/4 cup of the tomato sauce with the rest of the ingredients, and use your hands to mix everything together. Press the meat mixture evenly into the pan, and pour the rest of the tomato sauce on top. Bake for 50 minutes (or to an internal temperature of 160°F). Remove the loaf from the oven and let it sit in the pan for 10 minutes before serving.
