Angel Hair Pasta with Walnuts and Peas

Ingredients

  • 6 cloves garlic
  • 2 tsp. olive oil
  • 1 cup walnuts
  • 1/2 cup basil
  • 1/2 cup water
  • 7 oz. whole-wheat angel hair pasta
  • 2 cups fresh peas
  • 1/2 tsp. salt
  • black pepper to taste
  • red pepper flakes to taste (optional)

Preparation

Step 1

1. Preheat oven to 350°.
2. Peel garlic and drizzle with olive oil. Wrap in aluminum foil and roast in oven for 30 minutes. Let cool.
3. Combine walnuts, roasted garlic, basil and water in a food processor and process for 1 minute. (Or blend until smooth.)
4. Add pasta to a pot of boiling water and cook for about 7-8 minutes (according to directions on package). Drain the pasta.
5. Toss walnut mixture with pasta. Add peas, salt, pepper and red pepper flakes. Serve.
