Corned Beef Boiled Dinner

Ingredients

  • 4 pounds corned beef
  • Water to cover
  • 6 small white onions peeled
  • 1 onion peeled, stuck with
  • 8 whole cloves
  • 2 bay leaves
  • 1/2 teaspoon thyme
  • 2 teaspoons salt
  • 3 parsnips peeled
  • 8 medium carrots halved
  • 1 turnip cut in chunks
  • 5 medium potatoes quartered
  • 3 celery stalks cut into 3" lengths
  • 2 1/2 tablespoons chopped parsley

Preparation

Step 1

Place all the ingredients except the parsley in the crockery pot. Cover and cook on the LOW setting for 10 to 12 hours.

To serve, drain and place the corned beef on a serving platter with the vegetables around it. Sprinkle with chopped parsley.
