manicotti with spinach and cheese

  • 1 package manicotti
  • 3/4 lb fresh spinach boiled and finely chopped
  • 1 egg beaten
  • 500 g ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 tsp salt
  • 1.4 tsp pepper
  • 1/4 tsp nutmeg
  • 2 tbsp bread crumbs
  • 1 - 24 oz can tomato sauce

Step 1

cook manicotti according to package directions.drain and set a large mixing bowl combine ricotta ,spinach and egg.stir.continue stirring and add the 1/4 cup grated parmesan cheese,mozzarella cheese,salt,pepper,nutmeg and breadcrumbs.spread 1/4 cup tomato sauce over the bottom of a 9x13 baking dish..fill manicotti with spinach and cheese mixture and place a single layer in dish.cover with remaining sauce and sprinkle with parmesan cheese.cover and bake at 350 for 30-45 minutes or until tender.
