Apple Brownies

These "brownies" are very moist and have a wonderful apple flavor. An excellent substitution for the typical chocolate brownies. Serve warm topped with ice cream.
Ingredients
- 3 cups apples, peeled and diced in small pieces (about 3 - 4 apples)
- 3 cups all-purpose flour
- 2 cups sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1/3 cup orange juice
- 2 eggs
- 1 cup vegetable oil
- 1 teaspoon salt
- Non-stick cooking spray

Step 1
Preheat the oven to 325°F.
Spray non-stick cooking spray on the bottom and sides of a 9" x 13" glass baking dish. Add the flour, sugar, cinnamon, baking soda, and salt to a large mixing bowl and mix together.
In a small mixing bowl, add the eggs, vanilla, orange juice, and vegetable oil. Mix thoroughly.
Add the wet ingredients to the dry ingredients and mix together using a hand mixer until a thick batter is formed. Gently stir in the apples and mix until the apples are uniformly distributed throughout the batter.
Pour the batter into the prepared baking dish and bake for 45 minutes to 1 hour. Enjoy!! Refrigerate the leftovers.
