Ingredients

  • 1 1/2 cups of white rice(basmati is great)
  • 2 tbsp olive oil
  • 2 cups chopped onion(sweet are good)
  • 2-6 cloves of chopped garlic
  • 1 cup chopped green pepper
  • 2 1/2 tsp cajun spice(bulk foods)
  • 1-28 oz can of diced tomatoes undrained
  • 3-4 chicken breasts
  • 1/2 tsp salt
  • 1/2 tsp dried oregano
  • 1 tsp pepper
  • 1 1/2 cups chicken broth
  • 200 grams of shrimp(optional)
  • 2-3 chorizo sausages(deli dept)
  • 1 cup red pepper
  • 2 tbsp oil

Step 1

start rice should make 3 cups.cook chicken in frying pan.heat 2 tbsp oil in a large pot. put in garlic and onion and saute 4 mminutes on medium to high heat..stir in peppers,cajun spice,salt,oregano and pepper and saute 1 1/2 minutes.stir in broth and tomatoes and bring to a boil.cut up chicken and sausages into bite sized peices.add chicken, sausage and shrimp and let simmer for 45 minutes,stirring occasionally.add cooked rice then simmer for 10 minutes stirring occasionally.
