Ingredients
- Dressing:
- 1 Bag of Prewashed Lettuce
- 1 cup chopped celery
- 1 can water chestnuts, chopped
- 1 bag frozen peas (uncooked-may be frozen or thawed)
- 3 to 5 large tomatoes, chopped into bite-size chunks
- ..................
- 2 cups mayonnaise (lowfat or regular)
- 2 TBSP sugar OR Equivalent Sugar Substitute
- .................
- Topping:
- 3-4 sliced hard boiled eggs (if desired)
- 2 cups shredded cheddar cheese
- 3-5 slices crumbled cooked bacon

Preparation
Step 1
1. Boil eggs until hard boiled, then peel, cool, and slice – set aside
2. Cook bacon until crip, cool and crumble – set aside
3. Mix mayo and sugar together in small bowl – set aside
4. Layer the salad ingredients in a large serving bowl or glass trifle dish in the following order:
Lettuce
Chopped celery
Chopped water chestnuts
Frozen peas
Chopped tomatoes
Mayo/sugar mixture, spread on top
Sliced eggs
Shredded cheese
Crumbled bacon
