Ingredients

  • Dressing:
  • 1 Bag of Prewashed Lettuce
  • 1 cup chopped celery
  • 1 can water chestnuts, chopped
  • 1 bag frozen peas (uncooked-may be frozen or thawed)
  • 3 to 5 large tomatoes, chopped into bite-size chunks
  • ..................
  • 2 cups mayonnaise (lowfat or regular)
  • 2 TBSP sugar OR Equivalent Sugar Substitute

  • Topping:
  • 3-4 sliced hard boiled eggs (if desired)
  • 2 cups shredded cheddar cheese
  • 3-5 slices crumbled cooked bacon

Preparation

Step 1

1. Boil eggs until hard boiled, then peel, cool, and slice – set aside
2. Cook bacon until crip, cool and crumble – set aside
3. Mix mayo and sugar together in small bowl – set aside
4. Layer the salad ingredients in a large serving bowl or glass trifle dish in the following order:
 Lettuce
 Chopped celery
 Chopped water chestnuts
 Frozen peas
 Chopped tomatoes
 Mayo/sugar mixture, spread on top
 Sliced eggs
 Shredded cheese
 Crumbled bacon
