Corn-Stuffed Pork Chops

  • 1/4 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1 TBS butter'
  • 3/4 cup corn bread stuffing mix
  • 1/2 cup frozen corn, thawed
  • 2 TBS chopped pimentos
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 4 bone in pork loin chops (7 oz each)

Step 1

In a large skillet, saute the onion and green pepper in butter, until tender. Stir in stuffing mix, corn, pimentos, cumin, salt and pepper

Cut a pocket in each chop by slicing almost to the bone. Stuff each chop with mixture. Secure with toothpick if needed.

Place in a 11 x7in baking dish sprayed with cooking spray. Bake uncovered, at 375 for 35-40 min or until meat reaches 160 discard toothpicks
