Ingredients

  • 100-110 vanilla wafers
  • 1 pint red or green candied cherries (2 cups)
  • 4 cups chopped pecans
  • 1 (14oz) sweetened condensed milk
  • 2 cups shredded coconut or more as needed

Preparation

Step 1

Crush vanilla wafers. Chop cherries. Mix together vanilla waffers, cherries, pecans and condensed milk in a large bowl. Roll into six logs about 2 inches wide by 10 inches long. Roll logs into coconut. Wrap in waxed paper for storage. These are best stored in the fridge, but bring to room temperature to serve. Serve slices with coffee or tea.
