BEET BALSAMIC SALAD
Got this recipe from a Sobeys magazine - and I love beets so couldn't help but try it out...

Ingredients
- 8 medium sized beets
- 1/4 cup chopped walnuts
- 2 tbsp balsamic vinegar
- 1 tbsp olive oil
- 1/4 tsp salt and pepper
- 1/2 cup crumbled goat cheese
- 1 tsp fresh thyme, leaves only
Preparation
Step 1
Boil beets in salted water till tender - about 30 minutes.
Toast walnuts in a dry skillet till lightly toasted. Cool.
Drain the beets and run under cold water till they can be handled. Peel off skins. Slice them into 1/8" strips.
Mix the olive oil, balsamic vinegar, salt and pepper.
Drizzle over beets. Top with goat cheese and walnuts and thyme.
Serve warm or cold.
