Alaska Salmon Chowder

Ingredients
- 1 can 14.75 oz. traditional pack Alaska Salmon
- 1 T butter
- 1 small onion chopped
- 1 T flour
- 3 cups skim milk
- 2 cups frozen hash brown potatoes w/peppers and onions (Obrien style)
- 1 can 8oz. drained or 1 cup frozen corn
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/2 tsp lemon pepper
- 2 T sherry
- 1/4 cup bacon bits, divided

Preparation
Step 1
Drain, reserve liquid, and discard skin and bones from Salmon. Break into chunks, set aside. Melt butter in 2 qrt saucepan, add onions and cook 5 mins. Add flour, cook 1 min stirring occassionally. Add milk and salmon liquid, bring to boil. Stir potatoes, corn, seasonings and 2 T bacon bits. Return to simmer 5 mins. Stir in Sherry and Salmon, heat through. Ladle into bowls, sprinkle with remaining bacon bits.
