Black Bean Cakes w/Salsa

Ingredients

  • 3-15oz cans black beans, drained and divided
  • 2 eggs
  • 3 cups toasted breadcrumbs made from crustless french bread, divided
  • 1 cup chopped red bell pepper
  • 1/2 cup chopped green onions
  • 1/2 cup chopped fresh cilantro
  • 2 minced garlic cloves
  • 2 tsp chili powder
  • 1 tsp. each cumin, cayenne pepper, salt
  • 1/2 tsp onion powder, and black pepper
  • 4 T vegetable oil
  • Salsa
  • Sour Cream
  • Avocado Slices

Preparation

Step 1

Puree 2 cups bean in blender or processor till smooth. Transfer to large mixing bowl. Stir in remaining beans, 1 1/4 cups crumbs, and remaining ingredients. Shape mixture into 1/2" patties. Transfer to baking sheet, cover and chill 4 hours.

Heat 2 T oil over med. high in large skillet. Coat patties with remaining breadcrumbs, fry till golden brown 3 mins each side. Serve with salsa, etc.
