Black Bean Cakes w/Salsa

Ingredients
- 3-15oz cans black beans, drained and divided
- 2 eggs
- 3 cups toasted breadcrumbs made from crustless french bread, divided
- 1 cup chopped red bell pepper
- 1/2 cup chopped green onions
- 1/2 cup chopped fresh cilantro
- 2 minced garlic cloves
- 2 tsp chili powder
- 1 tsp. each cumin, cayenne pepper, salt
- 1/2 tsp onion powder, and black pepper
- 4 T vegetable oil
- Salsa
- Sour Cream
- Avocado Slices

Preparation
Step 1
Puree 2 cups bean in blender or processor till smooth. Transfer to large mixing bowl. Stir in remaining beans, 1 1/4 cups crumbs, and remaining ingredients. Shape mixture into 1/2" patties. Transfer to baking sheet, cover and chill 4 hours.
Heat 2 T oil over med. high in large skillet. Coat patties with remaining breadcrumbs, fry till golden brown 3 mins each side. Serve with salsa, etc.
