Ingredients

  • 4 eggs
  • 2 egg whites
  • 1 cup fresh spinach leaves
  • 2 tbsp chopped scallion
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 spray of cooking spray
  • 1/2 cup shredded fat free cheddar cheese

Preparation

Step 1

Preheat oven to 400
Beat eggs, egg whites,stir in spinach scallion salt and pepper
Coat a 12in. Skillet with spray. Heat skillet and pour mixture in and cook til partially set about 5 minutes. Sprinkle cheese over eggs place skillet in oven about 5 min. Cut into 8 wedges.
