Ingredients

  • 1 1⁄2 lbs ground beef
  • 1/2 c chopped onion
  • 1 T oil
  • 1 red bell pepper, chopped
  • 14 oz can corn, drained
  • Juice from 1 lime
  • 1 c salsa,
  • 2 T chili sauce
  • 1 t cumin
  • 8 oz shredded cheese

Step 1

Prepare enough rice for your family.
In a hot skillet brown beef and onion; drain. Remove from skillet. Wipe down inside of skillet. Add 1 T oil and sauté red peppers and corn until just crisp-tender. Stir in beef, lime, 1 c salsa, chili sauce, & cumin. Cook 2-3 minutes. In individual bowls, serve meat mixture over a mound of rice. Top with shredded cheese & a dollop of sour cream.
Serve tortilla chips & salsa on the side.
