Noodle Pudding with Peach or Apricot Preserves

Ingredients

  • 10 eggs (8 big ones and 2 egg whites)
  • 1 lb. Medium egg noodles
  • 2 sticks butter
  • 10 oz. jar of Peach or Apricot preserves
  • 1 cup sugar
  • 1/2 box white or golden raisins (optional)
  • Cinnamon sugar

Step 1

Oven to 450. Cook noodles for about 10-15 minutes until tender. Drain. Do NOT rinse. Add butter to hot noodles. While noodles are cooking - mix the following together: Beat eggs and sugar good. Add preserves and raisins. Add mixture to hot buttered noodles - grease pyrex dish - sprinkle bottom dish with cinnamon sugar then add noodle mixture and sprinkle top of noodles with cinnamon sugar. Bake at 450 for 10 minutes - Turn oven DOWN to 350 for another 35 - 40 minutes or until top is golden brown.
