Ingredients
- 1 pkg. Strawberry Cake Mix (regular size)
- 2 c. (16 oz.) Sour Cream
- 2 eggs
- 1/3 c. Strawberry Preserves
- 1 can (16 oz.) Vanilla Frosting
- Halved Fresh Strawberries
Preparation
Step 1
Preheat oven to 350. Line 24 muffin cups with paper liners. In a large bowl, combine cake mix, sour cream and eggs. Beat on low speed 30 seconds and on medium 2 minutes.
Fill muffin cups half full. Drop 1/2 t. preserves into center ofeach cupcake; cover with remaining batter.
Bake 22-27 minutes or until toothpick comes out clean. Cool in pans 10 minutes before removing to wire racks to cool completely.
Pipe frosting over cupcakes and top each with a strawberry half.
