Spicy Carrot Cake (Microwave Recipe)

  • 1 1/2 cups firmly packed brown sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups quick or old-fashioned oats, uncooked
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp allspice
  • 2 1/2 cups shredded carrot
  • 3/4 cup raisins
  • 3/4 cup chopped nuts

Preparation

Grease and flour a 12-cup plastic fluted tube pan. Combine sugar and oil in a large bowl; add eggs, one at a time, beating well after each addition. In medium bowl, combine remaining ingredients. Add to sugar mixture, mixing just until dry ingredients are moistened. Pour into prepared pan. Cook at high 13 to 14 minutes or until wooden pick inserted in center comes out clean, rotating pan 1/4 turn after each 5 minutes of cooking. Cool 10 minutes; remove from pan. Cool completely on wire rack. Drizzle with confectioners' sugar icing, if desired.
