Smashed Red Potatoes

Ingredients

  • Red Potatoes
  • Olive oil
  • salt and pepper

Preparation

Step 1

Boil potatoes for about 20 minutes until fork tender. Drain.
Coat a rimmed cookie sheet with olive oil. Place potatoes on cookie sheet and press with the bottom of a glass.
Drizzle with more EVOO and salt and pepper to taste. Bake at 425 degrees for 20-30 minutes until slightly golden.
