Spiced Rice Pilaf

Ingredients

  • 1 chopped onion
  • 2 Tablespoons oil
  • 1 Tablespoon butter
  • 2 cups basmati rice
  • 1 teaspoon cumin
  • 1 teaspoon cinnamon
  • 3 cups broth
  • 1/3 cup dried cranberries
  • 1/2 cup slivered almonds

Preparation

Step 1

Saute 1 chopped onion in 2 Tablespoons oil and 1 Tablespoon butter for 2 minutes. Add 2 cups basmati rice, 1 teaspoon cumin, 1 teaspoon cinnamon, and 3 cups broth. Simmer for 15 minutes. Add 1/3 cup dried cranberries and 1/2 cup slivered almonds.
