Ingredients

    C couscous

  • 1

    pkg (6 oz) dried mixed fruit, chopped

  • 1 1/2

    t ground cinnamon

  • 1

    t salt

  • 1

    can chicken broth

  • 2

    T olive oil

  • 2

    C cubed cook chicken

  • 1/2

    C orange juice

  • 1/2

    C sliced green onions

  • 1/2

    C sliced celery

  • leaf lettuce

  • toasted almonds or peanuts

Directions

1. In large bowl, combine couscous, dried fruit, cinnamon, and salt. 2. Bring broth and oil to a boil in medium sauce pan. Pour over couscous mixture. Cover, let stand 5 minutes until liquid is absorbed. Fluff with a fork and cool to room temperature, about 30-40 minutes. 3. Stir in chicken, orange juice, onions and celery. Serve on lettuce leaf, garnish with nuts.
