Fruited Chicken and Couscous Salad

Ingredients
- 1 C couscous
- 1 pkg (6 oz) dried mixed fruit, chopped
- 1 1/2 t ground cinnamon
- 1 t salt
- 1 can chicken broth
- 2 T olive oil
- 2 C cubed cook chicken
- 1/2 C orange juice
- 1/2 C sliced green onions
- 1/2 C sliced celery
- leaf lettuce
- toasted almonds or peanuts

Preparation
Step 1
1. In large bowl, combine couscous, dried fruit, cinnamon, and salt.
2. Bring broth and oil to a boil in medium sauce pan. Pour over couscous mixture. Cover, let stand 5 minutes until liquid is absorbed. Fluff with a fork and cool to room temperature, about 30-40 minutes.
3. Stir in chicken, orange juice, onions and celery. Serve on lettuce leaf, garnish with nuts.
