Mother's Best Fudge Cake
This is my all-time favorite chocolate cake.
- 3 ounces unsweetened baking chocolate
- 2/3 cup sugar
- 1/2 cup milk
- 1 beaten egg
- 1/2 cup shortening
- 1 cup sugar
- 1 teaspoon vanilla
- 2 eggs
- 2 cups sifted cake flour
- 1 teaspoon soda
- 1/4 teaspoon salt
- 2/3 cup milk
Combine chocolate, 2/3 cup sugar, 1/2 cup milk and beaten egg in saucepan. Cook and stir over low heat until chocolate melts and mixture thickens, cool.
Cream together shortening and 1 cup sugar until light and fluffy. Add remaining eggs, one at a time, beating well after each.
Sift together flour, soda and salt. Add to creamed mixture alternately with 2/3 cup milk, beginning and ending with flour mixture; beat after each addition.
Blend in cooled chocolate mixture. Bake in 2 9-inch round cake pans at 350 degrees for 25 to 30 minutes, or until done.
