  • 1 lb stewing beef
  • 3 tbsp shortening
  • 1/2 cup sliced onions
  • 1 cup v-8 juice
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1-2 beef oxo cubes
  • 1 cup diced potatoes
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 1/2 cup frozen peas
  • 1 tsp dried parsley
  • 1 cup water(more or less if necessary)

Step 1

brown stewing beef in shortening.add onions,v-8 juice, salt pepper and oxo cube.stir to blend evenly.cover pot and simmer very slowly for 2 1/2 hours,stirring occasionally and adding water if necessary.add potatoes,carrots,celery,parsley and water if necessary.continue simmering covered for about 30 minutes.add peas and simmer until peas and other vegetables are tender. thicken with flour if necessary
