Ingredients
- 2 1/4 cups all-purpose flour
- 1/3 cup granulated sugar
- 2 1/2 tsp baking powder
- 1/4 tsp salt
- 1/3 cup butter or margarine, at room temperature
- 1 egg
- 3/4 cup mashed pumpkin (pre-cooked)
- 1 tsp grated orange peel or lemon peel
- 1 cup milk
- 1/4 cup golden raisins

Heat oven to 400 F. Grease 12 (2 1/2-inch) muffin cups.
Mix flour, sugar, baking powder and salt in a large bowl. Cut in butter with pastry blender or knife until mixture resembles fine crumbs.
Beat egg in a medium-size bowl. Stir in pumpkin, orange or lemon peel and milk. Add to flour mixture. Gently stir just until blended, then stir in raisins. Fill muffin cups 3/4 full.
Bake 20 to 25 minutes until lightly browned and a pick inserted comes clean.
Remove from pan to wire rack to cool. Serve warm.
