Cauliflower-Bacon Gratin

Ingredients

  • 1 cauliflower
  • 1/4 pound bacon, in strips
  • 1/3 cup flour
  • 5 eggs
  • 1 cup heavy cream
  • 2/3 cup whole milk
  • 3 oz. swiss cheese, grated
  • grated nutmeg
  • salt and pepper

Preparation

Step 1

1. Place oval baking dish on baking sheet and butter generously.
2. Place cauliflower in boiling salted water for 10 min., then drain, run cold water over and pat dry.
3. Cook bacon just until done.
4. Place cauliflower in dish and sprinkle with bacon.
5. Combine remaining ingredients, first adding eggs slowly to flour until well combined. Keep back some cheese for sprinkling over at end.
6. Pour eggs and milk mixture over cauliflower. Shake pan a bit to settle, sprinkle with cheese.
7. Bake at 425 about 25 min.
