Sweet Potato Fries

Ingredients

  • 1 1/2 pounds sweet potatoes, peeled and cut into 1/2-inch strips
  • 2 tbsp olive oil
  • 2 tbsp fresh Italian parsley, chopped
  • 1 tsp fresh thyme (or 1/4 tsp dried)
  • 1 clove garlic, minced

Preparation

Step 1

Preheat oven to 475 F.

In large bowl, toss sweet potatoes, peeled and cut into 1/2-inch strips, with olive oil, fresh Italian parsley, thyme and garlic.

Sprinkle generously with salt and pepper.

Spread sweet potatoes in a single layer on large baking sheet coated with cooking spray.

Bake until tender and golden brown, turning occasionally, 20 to 25 minutes.
