Ingredients
- 2 1/2 cups unbleached flour
- 1 1/4 cups brown sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 1 egg
- 1 1/3 cups diced rhubarb (well-drained, if frozen)
- 1/2 cup chopped walnuts
- 1 tbsp melted butter
- 1/3 cup granulated sugar
- 1 tsp cinnamon
Preparation
Step 1
Sift together flour, brown sugar, baking powder, baking soda and salt into a large bowl.
In a separate bowl, beat buttermilk, oil and egg until well-blended. Pour into dry ingredients and mix just until moistened.
Fold in rhubarb and nuts; spoon mixture into greased muffin cups. Combine melted butter, granulated sugar and cinnamon; sprinkle on top of batter. Bake in preheated oven at 425 F for 20 to 25 minutes. Remove from cups immediately.
