Ingredients
- Dressing:
- 1/2 small head romaine lettuce
- 2 oranges
- 1/4 red onion, sliced
- 1 tbsp fat-free, low-salt vegetable broth
- 1 tbsp orange juice (from segmented oranges)
- 1/2 tbsp Dijon mustard
- 1 tsp canola oil
- Salt
- Freshly ground pepper
Preparation
Step 1
Wash and tear lettuce into bite-sized pieces. Over a small bowl, remove skin from the oranges and cut into segments, catching as much juice as possible. In a salad bowl, whisk vegetable broth, orange juice and mustard together. Whisk in oil. Add salt and pepper to taste. Add lettuce and toss with dressing. Add orange segments and top with sliced onion.
