Fresh Mushroom Soup

  • 1 lb4 T ground pepper fresh mushrooms
  • 1/4 c plus 2 T butter
  • 2 C chopped onion
  • 1 T brown sugar
  • 1/4 CC flour
  • 1 C water
  • 1 3/4 C chicken broth
  • 3/4 C dry vermouth
  • 1 t salt
  • 1/4 t pepper

Step 1

Slice one-third of mushrooms; finely chop remaining mushrooms. Set aside.
Melt butter in a dutch oven; add onion and brown sugar. Cook over medium heat, stirring constantly, 15 minutes or until onion is caramel in color. Add all of mushrooms, and saute 5 minutes. Add flour, stirring constantly, Gradually add water, broth and vermouth; cook over medium heat until slightly thickened. Reduce heat and simmer 10 minutes. Stir in salt and pepper.
