Low Fat S'mores Cake

Ingredients

  • 2/3 cup cake flour
  • 2 1/2 cups graham cracker crumbs
  • 2 tsp baking powder
  • 1 cup nonfat milk
  • 1/2 cup applesauce
  • 1 tsp vanilla
  • 3 egg whites
  • 1/4 tsp cream of tartar
  • 1/2 cup sugar
  • 2 cups miniature marshmallows
  • 1/4 cup mini chocolate chips

Preparation

Step 1

Lightly butter 2 (8-inch) round springform cake pans or spray with nonstick cooking spray.

Stir together cake flour, graham cracker crumbs and baking powder in medium bowl.

In another bowl, combine nonfat milk, applesauce and vanilla. Add to dry ingredients, stirring just until blended.

Beat egg whites until frothy. Add cream of tartar and continue beating until thick and foamy. Gradually add sugar, beating until soft, smooth peaks form. Fold half into batter until blended. Fold in remaining whites until just blended. Divide batter into prepared pans, spreading evenly. Bake at 350 F for 15 to 20 minutes or until wood pick comes out clean.

Sprinkle marshmallows and chocolate chips over tops of cakes. Place under broiler to brown slightly. Let cool to warm and serve.
