Ingredients
- 1/2 cup dry lentils
- 3 cups water
- 2 tbsp vinegar
- 2 tbsp honey
- 1 tbsp tamari or soy sauce
- 1/2 tsp grated fresh ginger or 1 tsp ground ginger
- 1/2 cup water
- 1 tsp arrowroot powder or cornstarch
- 1 small onion, sliced
- 2 tbsp oil
- 4 to 5 stalks diagonally sliced celery
Preparation
Step 1
To cook lentils, bring water to a boil, then reduce heat and cook about 25 minutes or until tender. Do not overcook. Drain and set aside.
To make Sweet and Sour Sauce, combine vinegar, honey, tamari sauce, ginger and 1/2 cup of water in a small saucepan. Bring to a boil. Put arrowroot powder or cornstarch in a small glass and add a little water. Mix thoroughly and add to boiling sauce to thicken it. Saute in oil in a large frying pan. When onion is soft, add pieces of celery and cook for 5 minutes more over medium heat. Drain cooked lentils and add to frying pan; mix well. Pour Sweet and Sour Sauce into frying pan and simmer for 5 minutes more. Serve over a bed of freshly steamed brown rice.
