Ingredients
- 1 c. packed mashed sweet potato (about 1 large potato)
- 1 1/2 c. chickpeas (about 1 can, rinsed)
- 2 cloves garlic, minced
- 2 tsp maple syrup
- 4 Tbsp extra virgin olive oil
- 2 Tbsp tahini
- 2 tsp apple cider vinegar
- Salt and pepper to taste
Preparation
Step 1
1. Peel the potato and cut it up into chunks. Boil until soft when poked with a fork. (I've also baked a whole one and used it this way.)
2. Mix all ingredients in a bowl.
3. Using a food processor, blend together.
4. Refrigerate until cool.
5. Serve.
