Pasta with Pumpkin Cream Sauce

Ingredients

  • 4 slices bacon, finely diced
  • 20 sage leaves, chopped
  • 1/2 onion, diced
  • 2 gloves garlic, diced
  • 2 cups chicken broth
  • 1-2 cups pumpkin puree
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • Half and half
  • 1 cup parmesan
  • 1 lb. pasta
  • Salt and pepper, to taste

Preparation

Step 1

Render the fat from bacon. When almost cripsy, add sage leaves to fry. Drain,and pour oil out of pan. Add olive oil to sauté onion and garlic. When onion is translucent, add garlic and sauté until fragrant. Meanwhile, cook pasta as directed. To the sauté pan, add broth, pumpkin and spice. Whisky until creamy, then thin with half and half. Add parmesan and whisk to stay smooth. When pasta is done, add to pan and stir to combine.
