Gluten-Free Pizza Crust

Not sure what it is, but this crust tastes like it's made out of whole wheat! This recipe makes enough for 1 personal pan pizza.

Ingredients

  • This makes enough for 1 small 9 inch pizza
  • 3/4 cup warm milk
  • 1 1/2 tsps sugar
  • 1 tbsp active dry yeast (I really think 1/2 TBSP would be enough!!)
  • 1/2 cup millet flour
  • 1/2 cup white rice flour
  • 1/4 cup potato flour
  • 1 1/2 tsp xanthan gum
  • 2 tsp olive oil
  • 1 tsp pizza seasoning (or Italian)
  • 1 tsp cider vinegar
  • 1/2 tsp salt

Preparation

Step 1

3/4 cup warm milk
1 1/2 tsps sugar
1 tbsp active dry yeast (I really think 1/2 TBSP would be enough!!)
1/2 cup millet flour
1/2 cup white rice flour
1/4 cup potato flour
1 1/2 tsp xanthan gum
2 tsp olive oil
1 tsp pizza seasoning (or Italian)
1 tsp cider vinegar
1/2 tsp salt

1-2 TBSP white rice flour

4 sheets parchment paper, each piece should measure about 12 by 12 inches.

Combine warm milk and sugar in a small bowl and mix in the yeast.

In another larger bowl, combine flours, xanthan gum, salt. Mix well. Then mix in pizza seasoning.

In another small bowl, combine vinegar and olive oil.

First add the milk/yeast wet mix to the flour. Mix in slowly, then mix in the vinegar/oil. Use your hands to kneed the dough.

Roll the dough into a ball. Sprinkle with half the white flour.

Let set for about 30 minutes.

When you roll out the dough (between 2 sheets of parchment paper), 30 minutes after you let it sit, sprinkle more flour on the rolling pin and dough, if necessary.

Baking: (Preheat oven to 425)
FIRST: Bake the pizza for about 7 minutes at 425 (without toppings)
THEN: Place toppings on pizza
LASTLY: Bake pizza for another 12-14 minutes at 425 (with toppings).
