Ingredients

  • 3 pounds potatoes, peeled and quartered
  • 2 eggs
  • 1 cup ham, diced and fully cooked
  • 1 cup Mozzarella cheese
  • 1/4 cup parmesan cheese
  • 3 tbsp parsley
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1/8 tsp garlic powder
  • 1 tbsp butter

Preparation

Step 1

Place potatoes in a dutch oven and cover with water. Bring to a boil. Reduce heat; cover and cook for 20-25 minutes or until very tender. Drain well and mash.

In large bowl, beat eggs. Add ham, cheeses, 2 tbsp parsley, salt, pepper and garlic powder. Stir in mashed potatoes.

Transfer to a greased shallow 2-quart baking dish. Dot with butter. Bake, uncovered, at 350* for 25-30 minutes or until heated through. Sprinkle with remaining parsley.
