Mexican Skillet Corn

Ingredients

  • 2 Tbsp butter
  • 1 c chopped onion
  • 1 c chopped red bell pepper
  • 1 (16 oz) pkg frozen whole-kernel corn, thawed
  • 1/2 tsp ground chipotle pepper
  • 1/4 tsp ground cumin
  • 1/4 tsp ground coriander
  • 1/4 tsp salt

Preparation

Step 1

In a large skillet, melt butter over medium-high heat. Add onion and bell pepper; cook, stirring frequently, for 3 minutes.

Add corn and remaining ingredients; cook for 6 to 8 minutes, or until corn is heated through.

(We had with with Beef and Bean Tostadas - it was a good combination)
