***Artichoke Frittata - Tia's

Ingredients

  • 4-6 oz. jars artichoke hearts in oil - I use Cara Mia for flavor
  • 8 eggs
  • 1/2 tsp. pepper
  • 1/2 cup parsley
  • 1 # shredded cheddar
  • 1/2 cup bread crumbs
  • 2 small chopped onions
  • 2 cloves minced garlic

Step 1

Saute art. hearts, nion, garlic. Beat eggs -- mix with onion mixture. Pour into buttered 13" pyrex. Bake 325 oven for 30 min.
