CHUNKY APPLE CAKE
- 2 cups sugar
- 1 1/4 cups (2 1/2 sticks) butter, softened, divided
- 2 large eggs
- 2 teaspoons vanilla extract, divided
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 3 cups peeled, chopped, Golden Delicious apples (2 large)
- 1 pkg. (3 ounces) cream cheese, softened
- 3 cups confectioners' sugar
Preheat oven to 350 degrees. Grease and flour a 13x9 inch baking pan.
Combine sugar and 3/4 cup butter in a large bowl.
Beat with an electric mixer on medium-high speed until creamy, 1-2 minutes.
Add eggs and 1 teaspoon vanilla; beat until light and fluffy, about 2 minutes.
Combine flour, baking powder, baking soda, cinnamon and salt in a medium bowl; mix well.
Add flour mixture gradually to sugar mixture, beating on low speed until well combined.
Stir in apples.
Spread batter in prepared pan.
Bake cake until toothpick inserted in center comes out clean, 45-55 minutes.
Cool completely in pan on a wire rack.
Beat remaining butter and cream cheese in a medium bowl with an electric mixer on medium-high speed until creamy, about 2 minutes.
Add confectioners' sugar and remaining vanilla; beat until smooth.
Spread frosting on top of cooled cake; sprinkle with additional cinnamon, if desired.
