German Potato Salad

My fovorite not too strong with vinegar.

Ingredients

  • 4 med. red potatoes
  • 4 slices bacon
  • 1 sm. onion, chopped or 6 green onions slices
  • 2 Tablepons sugar
  • 1 tablespoon flour
  • 1 teaspoon beef stock base, I use Tone's
  • 1 teaspoon salt
  • 1/4 cup vinegar
  • 1/2 cup water

Preparation

Step 1

Cook unpeeled potatoes until tender. Remove and let cool. In fry pan fry bacon until crisp. Reserve 3 Tablespon's dripping. Crumble bacon. To drippings fry onions till tender on low heat. Add sugar, flour, beef base,stir till smooth. Stir in vinegar and water, whhisk till smooth, bring to boil.

Peel potatoes, slice and add to sauce. Add bacon, toss to coat. Serve warm

Can put into a 300 degree oven to keep warm for a short while.
