Hamburger Vegetable Soup

Ingredients

  • 1/2 lb. ground beef, browned, drained, and patted dry with paper toweling
  • 1 beef bouillon cube, crushed
  • 5 tsp. salt-free beef bouillon powder
  • 16-oz. can stewed tomatoes
  • 1 large onion, diced
  • 3/4 cup sliced celery
  • 1 medium carrot, diced
  • 1 garlic clove, minced
  • 1 bay leaf
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1-2 cups water, depending upon how much liquid you like soup to have
  • 10-oz pkg. frozen peas
  • 3 Tbsp. chopped parsley

Preparation

Step 1

1. Combine all ingredients except peas and parsley in slow cooker.

2. Cover. Cook on Low 5 hours.
3. Stir in peas during last hour.

4. Garnish with parsley before serving.
