Spinach Salad with Goat Cheese and Mango Chutney Dressing

Ingredients

  • 3/4 cup (9 ounce jar) hot mango chutney
  • 1/4 cup olive oil
  • 3 tbsp white wine vinegar
  • 1/8 tsp dry mustard
  • 1/8 tsp salt
  • 8 cups (about 2 small bunches) fresh spinach leaves, washed, dried and coarsely chopped
  • 2 red apples, unpeeled, cored, halved and thinly sliced
  • 2 tbsp (1 large) thinly sliced green onion
  • 1/4 cup (1 ounce) crumbled goat cheese
  • 1/4 cup chopped pecans, toasted

Preparation

Step 1

Place chutney, olive oil, vinegar, mustard and salt in blender; cover. Blend until smooth.

Combine spinach, apples and green onion in large bowl. Add dressing; toss well to coat. Sprinkle with goat cheese and pecans. Serve immediately.
