Ingredients

  • 1 cup of pitted dates, chopped
  • 1 cup of boiling water
  • 1/2 cup golden syrup
  • 11/4 cups of plain flour
  • 1 teaspoon bicarb soda
  • 3/4 cup rolled oats
  • 11/4 cups chopped walnuts

Preparation

Step 1

Preheat oven to 180 degrees
Celsius. Line a loaf pan with baking
paper.
Place the dates in a heatproof
bowl and pour the boiling water
over the top. Pour in golden syrup
and stand for 15 minutes.
Sift flour and bicarb soda into
another bowl, add the oats and
walnuts and stir.
Add the date mixture and stir
until well combined.
Spoon the mixture into the loaf
tin and sprinkle with walnuts if
desired.
Bake for 50 minutes. Stand in
loaf tin for about five minutes,
then continue cooling on a wire
rack
