Sunday Brunch Casserole (Cathryn Bowen)

Ingredients

  • 1/2 lb. bacon
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 12 eggs
  • 1 cup milk
  • 1 (16 oz.) pkg. frozen hash browns, thawed
  • 1 cup shredded cheese, salt and pepper

Preparation

Step 1

Cook bacon until crisp; crumble and set aside. In the drippings, sauté the onions and green pepper until tender. Beat eggs and milk in a large bowl. Stir in hash browns, cheese, salt and pepper, onion, green pepper, and bacon. Pour into a 9 x 13 greased pan. Bake at 350 for 35-45 minutes until knife comes out clean!
