Spiced Baked Sweet Potatoes with Walnuts

By

From Country Living

The subtle spiciness of garam masala -- an Indian spice blend of coriander, cumin, cinnamon, and black pepper -- contrasts well with sweet potatoes. Look for it in most grocery stores or online at kalustyans.com.

Preparation

Step 1

•Make the potatoes: Preheat oven to 400 degrees F. Using 1 tablespoon of the butter, lightly coat a 10-inch pie plate and set aside. Combine the sweet potatoes, 3 tablespoons of melted butter, 1 1/2 teaspoons of garam masala, and salt in a large bowl. Layer the potato slices in the prepared pan, cover with foil, and bake for 30 minutes. Uncover and bake until the potatoes are tender -- about 20 more minutes.
•Make the topping: Combine remaining butter, remaining garam masala, brown sugar, and corn syrup in a small saucepan and cook over medium-high heat until the sugar melts. Pour the syrup over the potatoes, top with the walnuts, and serve warm.
