    pound(s) butternut squash, peeled, seeded, and cut into 1-inch cubes

    large onions, chopped

  • 6

    clove(s) garlic

    tablespoon(s) curry powder

    teaspoon(s) freshly ground pepper

Directions

•Preheat oven to 400°F. In a large bowl, toss butternut squash, onions, garlic, curry powder, salt, and pepper with vegetable oil to coat. Divide between 2 baking pans and roast until browned, 45 minutes. •Using a blender, puree batches of roasted vegetables with vegetable broth. •Transfer to a large pot and heat.
