Flavorful French Onion Soup

A delicious soup FULL of flavor and finished off with a warm slice of crusty, cheesey bread....yummmmmy!
Ingredients
- 2 1/2 pds. yellow onions, halved, sliced thin
- 1/4 pd. unsalted butter
- 2 bay leaves
- 1/2 c. dry sherry
- 1/2 c. brandy
- 1 1/2 c. dry white wine
- 4 c. beef stock
- 4 c. chicken stock
- Kosher salt
- Pepper
- 4-6 baguette slices
- Freshly grated Parmesan

Step 1
In a large pot over medium-high heat, saute onions with butter and bay leaves approx. 20 min. or until onions turn golden brown. Deglaze the pan with sherry & brandy; simmer approx. 5 min. Add whine & simmer 15 min. more.
Add beef & chicken stocks. Season with salt & pepper to taste. Bring to boil, simmer approx. 20-30 min. Remove bay leaves, add more salt & pepper if desired. Cover, set on low until ready to serve.
Serving:
Spoon servings into 4-6 individual, oven safe bowls. Place baguette slice into each bowl, sprinkle with freshly grated parmesan cheese, broil 1-2 min., until cheese melts.
