Chicken Lettuce Wraps

Ingredients

  • Cooking Sauce:
  • 1 lb ground chicken (course if possible)
  • 1 c water chestnuts, diced
  • 1 red bell pepper, diced
  • 4 green onions, white and green parts (chopped)
  • 4 cloves garlic minced
  • 1 TBSP fresh ginger, minced
  • Vegetable or peanut oil for stir frying
  • Iceberg or butter lettuce leaves (approx. 1 head)
  • Marinade;
  • 2 tsp cornstarch
  • 4 tsp orange juice or chicken broth
  • 4 tsp water
  • 2 tsp soy sauce
  • 2 tbsp vegetable oil
  • 2 tbsp hoisin sauce
  • 2 tbsp soy sauce
  • 1 tbsp orange juice or chicken broth
  • 2 tbsp oyster sauce
  • 4 tbsp water
  • 2 tsp sesame oil
  • 2 tsp sugar
  • 4 tsp cornstarch

Combine all the ingredients for the marinade and pour over ground chicken, either in a bowl or a large zip lock bag. Let marinade for 15 minutes.

Combine all the ingredients for the cooking sauce and set aside.

Heat a very large skillet over medium high heat until hot. Add 2 tbsp of oil to the pan and heat until it begins to shimmer. Add chicken in batches and stir fry until done (about 3 to 4 minutes per batch) Don't worry about draining off the marinade; it will cook off quickly. Set chicken aside in a bowl. Add 2 more tbsp of oil to the pan. Drop in ginger and garlic and stir fry about one minute. Add the rest of the veggies and stir fry for 2 minutes. add the chicken, any juices that may have accumulated on the plate, and the cooking sauce to the pan, and cook until thickened ( 1 to 2 minutes). Serve with lettuce leaves to wrap.

Serve with chopped cilantro and sesame seeds if desired.
